British Bresaola

Bresaola, or air-dried beef, originates from the northern Italian Alps, but our version is made with brilliant British beef. Our Bresaola uses a lean cut from the topside, and its delicious meaty flavour is enhanced with a classic blend of garlic, rosemary and black pepper.

Loin (Available as part of our Mixed Board)

Our pork loins are butchered with a generous fat cap, adding a lingering, buttery texture and balanced flavour profile. A delicately flavoured cut, the loin is spiced gently to allow the meat to shine, with flavours of mace, star anise and black pepper.

Coppa (Available as part of our Mixed Board)

Made using pork collar, with a natural 70:30 ratio of lean to fat, our coppa has a rich flavour and a delicious texture. We flavour the collars simply with black pepper and smoke them gently over real wood, before air drying for at least 3 months.

Fennel Salami (Available as part of our Mixed Board)

Loosely based on a traditional Italian finocchiona, our fennel salami is enhanced with black pepper and a delicate blend of spices for a deep, complex and savoury flavour. The meat is coarsely ground with the perfect charcuterie ratio of 70:30 lean to fat.
